Yen Can Cook ~ Braised Pork Ribs with Peanuts & Bean Curd Sheets

1st blog post of 2022 Water Tiger Year is an easy braised pork ribs recipe that promises tender ribs with a rich, savory gravy, accompanied by soft peanuts and Fuzuk (bean curd sheets).
Ingredients (Serve: 3-4)
500g pork ribs
10g peanuts (soaked in water a night before cooking)
2 bean curd sheets/bean curd stick
1.5 tablespoon soy sauce
1 teaspoon dark soy sauce
1 cube red fermented bean curd (Nam Yue)
1 teaspoon rock sugar
4 cloves garlic
5 cups of water
Salt to taste

Step 1: Clean the pork ribs then put them a pot of water and bring to a boil, to remove blood and impurities. Remove, drain and set aside.
Step 2: Soak the bean curd sheets/bean curd stick in water until soften. Cut into desired size.
Step 3: In a wok, heat up some oil then add in garlic and fried till fragrant
Step 4: Add in the pork ribs and stir fry for 2 – 3 minutes then add in peanuts, bean curd sheets (Step 2), soy sauce, rock sugar, red fermented bean curd and water, bring to a boil then simmer on low heat.
Step 5: Cook till the peanuts are soft and the pork ribs are tender.
Step 6: Add in dark soy sauce for colouring and season with salt if necessary.
Step 7:Serve.

This is such a homey & delicious dish….more rice, please! I love the soft peanuts and bean curd sheets. I would have just used those braised peanuts in a can to cut down the simmering time…hehehe! 😉
Kris, it’s certainly a good idea to used canned peanuts can the raw one need longer time to be cooked until soften. =.=”
I am not so happy to recommence work hah..hah… But this dish I know I will love. It has all my favorite ingredients in it. I will try cooking it and I must remember to buy nam yue.
