Yen Can Cook ~ Honey Rock Sugar Lemon
Something cooling & refreshing to battle the current sizzling hot weather. This lemon syrup is simple to prepare—all you need is just TWO ingredients to get started! The lemon syrup can be made into hot lemon tea or cold lemonade.
Ingredients
5 lemons
250g honey rock sugar, break into smaller pices (can be found at supermarkets or Chinese medicine shop)

Step 1. Sterilize your container. Put the glass jars or bottles in boiling water and boil for about 10 minutes. Remove from hot water and allow to air dry completely before use.
Step 2: Scrub the lemons with coarse salt to remove the waxy coating and any chemical residues on the skin. Rinse with water and wipe dry with a clean towel.
Step 3: Slice the lemons thin and even slices. Remove the seeds to avoid bitter aftertaste.
Step 4: Put the honey rock sugar into a pot or deep skillet in one layer, then topped with lemon slices. Cook to melt the sugar with low heat, until all honey rock sugar is dissolved.
Step 5: Continue to simmer for another 5 minutes then off the heat and let the syrup completely cool down. Put the lemon syrup into the sterilized container and store in refrigerator.
How to use?
- Lemonade: Put a spoonful of lemon syrup + lemon slices in a cup then add water.
- Lemon Tea: Prepare a cup of tea, add lemon syrup as per desired.
