Yen Can Cook ~ Chinese Style Braised Pork Chop
I have been bookmarked this recipe from China Sichuan Food for a while and didn’t have that mood to get my hands on it. For those who’re cooking will understand me that we just need that suitable mood to cook a certain dish, right? #sayyesplease
So, there’s one day I finally bought a few pieces of boneless pork loin chop (or choose other your preferred cut of meat) from the butcher and try out the recipe. It turned out to be one of my favourite pork dishes, juicy, tender and flavorful! Definitely a keeper! I believe the pork loin chop with good ration of fat and lean meat that I used is one of the keys to success for this recipe, which rendering a tenderly soft pork chop. ヾ(^ ^ゞ
Ingredients (Serve: 3-4)
4pcs pork chops
4 tablespoons corn flour (or sweet potato flour)
1.5 tablespoons water
1 stalk spring onions , cut into to 2 inch length, green and white part separated
1/2 yellow/red onion, sliced
1 thumb-sized ginger, sliced
2 tablespoons soy sauce
1/2 teaspoon sugar
Salt to taste
100ml water
Cooking oil
Marinade
1 tablespoon soy sauce
1 tablespoon cooking wine
A dash of pepper
A small pinch of salt

Step 1: In a bowl, mix to combine all ingredients of marinade. Set aside.
Step 2: Pound both side of the pork chops a pounder or the back of a knife to tenderize the meat. Put the pork chop and marinade (Step 1) into a ziplock bag, marinate them for 20-30 minutes in the fridge.
Step 3: Take out the marinated pork chop and let them return to room temperature. Mix the corn flour and 1.5 tablespoons water, then add into the marinated pork chop in the ziplock bag.
Step 4: Heat cooking oil in a wok the deep fry pork chop until they turn golden brown. Remove, drain and set aside.
Step 5: Heat cooking oil in a pan and saute ginger, sliced onion and white part of spring onion until fragrant. Then put in the fried pork chops, soy sauce, water and sugar. Simmer for 1 to 2 minutes.
Step 6: Add in green part of spring onion, simmer for another 20 seconds. Add salt to taste.
Step 7: Serve.

I see you’re cooking more deep fried stuff since you got that oil splatter thingy….lol. Your pork chop has a very nice browning from deep-frying. Looks good and easy to make….except that part that requires deep-frying…hehe.
Kris, yeah, more deep fried dishes recently but although I have that oil splatter cover, I still don’t like to fry food in my kitchen as it tend to make my house very smelly >_<
Your pork chops are so beautifully browned and I bet it was delicious. Like Kris, I am not so keen on the deep frying part. LOL!
PH, I think the frying process can be done in air fryer too but you know lah, the result of both are very obviously different, in terms of texture and and flavours. Yes, I must say I nailed this dish and I can foresee I’ll cook this more often. ^__^
