Yen Can Cook ~ Long Beans Omelet
Another omelet dish to be added into my list! Do you have any omelet dishes that you can share with me?
Substitute long beans with French beans if you prefer a tenderer bite texture.
Ingredients (Serve: 3-4)
5 long beans
4 eggs, beaten
1 teaspoon light soy sauce
A dash of pepper
A pinch of salt
Cooking oil
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Trim both ends of the long beans, cut into 1mm-2mm thickness. Set aside
Step 2: In a bowl, combine and mix well egg, salt, soy sauce and pepper. Set aside.
Step 3: Heat cooking oil in a pan/wok, add in long beans (Step 1) and stir fry until it is soften. Pour in egg mixture (Step 2).
Step 4: Let the egg mixture cook to set for 30 seconds to 1 minute, then slightly scramble the egg. Continue to cook to your desired doneness.
Note: Method 2: Pour the eggs into the pan and swirl the wok to let the egg cover the base of the wok. Allow egg to cook and set for about 2 to 3 minutes. Then flip over and fry till both sides are golden brown.
Step 5: Serve.

PH, weirdly I very very seldom cook luncheon meat omelet, or have I ever cooked it? Nevermind, I’ll do it soon and post the recipe! Haha!
I actually love plain omelette but wouldn’t mind some “liew” every now and then. If I had to pick one, it probably would be yin sai omelette (weird, right?). Ok-lah, a not-so-weird one would be a gao choy omelette.
Kris, I love all kind of omelet, be in plain of with “liew”. But Yin Sai omelet definitely something new to me, but I’ll try to cook and have it all by myself as hubby & Sam not a fan of this “weird vegetables”, LOL.
