Yen Can Cook ~ Luncheon Meat Fried Rice

Fried rice, a quick and easy dish that can be whipped up with endless of ingredients combinations and customize your fried rice with your favourite ingredients and spices. Fried rice is an incredibly versatile and is perfect for that moment when you need to use up leftover ingredients.


Today’s fried rice recipe is a sure winner with the magical ingredient of luncheon meat and addition of a secret ingredient – seaweed/nori sheet, for that extra umami flavour!

 

Ingredients (Serve: 3-4)

4 cups leftover cooked rice

1 canned luncheon meat, diced

1 carrot, diced

Handful of French beans/long beans, diced

2 eggs, beaten

1 seaweed sheet, crumbled 

Note: I used those for making sushi, or you may use seaweed snack or even furikake (omit the sesame seeds if you’re using furikake).

1 tablespoon white sesame seeds 

2 stalks spring onion, chopped 

1.5 tablespoon soy sauce

1 teaspoon sesame oil

1/2 teaspoon salt

1 teaspoon pepper

Cooking oil

Step 1: In a bowl, mix the soy sauce, sesame oil, salt and pepper. Pour into the leftover rice, coat evenly every rice grain and set aside.

Step 2: Heat up the wok/deep pan, add in seaweed  and sesame seeds, toast until the sesame seeds are slightly browned & fragrant. Dish up and set aside.

Step 3: Heat cooking oil in the same wok, pan fry the diced luncheon meat till browned. Dish up and set aside. 

Step 4:  In the same wok, add the beaten egg and stir quickly to scramble it. Dish up and set aside.

Step 5: Heat the wok with high heat and swirl in more cooking oil. Add the diced carrot and French beans, sauté for 2-3 minutes till slightly soften.

Step 6: Then add the seasoned rice (Step 1) to the wok, stir to mix well with the vegetables. Spread the rice mixture over the surface of the wok and let it fry, without moving it. You should hear the rice sizzle. Cook for about 1 to 2 minutes. Stir and let cook for a minute longer.

Step 6: Add luncheon meat (Step 3) and eggs (Step 4) into the rice mixture, stir to combine. Then add in seaweed and sesame seeds (Step 2), stir to combine again. Add more seasoning to taste.

Step 7: Add in chopped spring onion, stir to combine. Serve.
