Yen Can Cook ~ One Pot Pasta Bolognese
You probably know by now that I am a lazy mama who likes quick and easy recipes with no complicated instructions. Being a working mother who has to prepare dinner on weeknights (weekend is my off day!), simple and speedy recipes are what I need! So, one pot dish perfectly fit the bill – all cooking can be done in one pot and of course minimal washing up too which everyone always appreciates!
Today’s recipe of One Pot Pasta Bolognese is the quick version of Spaghetti Bolognese, which the spaghetti is cooked IN the meat sauce. I’m using Capellini /angel hair but this recipe would work just as well with spaghetti, macaroni, penne or other pasta, whatever you’ve got in your cupboard. Amount of liquid (stock or water) need to be adjusted according to the thickness of the pasta used.
Ingredients (3 – 4)
300g Capellini
2 tomatoes, diced
1 onion, finely chopped
2 garlic cloves, minced
500g minced beef
600g tomato puree (roughly 1.5 tin)
3 tablespoons ketchup
2 teaspoons Italian mixed herbs
3/4 teaspoon salt
3/4 teaspoon black pepper
800ml – 1000ml stock/water
Cooking oil

Step 1: Heat the oil in a large deep pan, add in the onion, cook until soften then add in garlic, continue saute until fragrant.
Step 2: Add in diced tomatoes, stir fry until soften and juice released.
Step 3: Add the minced beef and fry until change colour.
Step 4: Pour in the tomato puree, stock, ketchup and Italian mixed herbs, bring to a boil.
Step 5: Add the pasta, cook until soften and try to push the pasta under the meat sauce. Stir every minute or so, to ensure the pasta doesn’t stick together. Add more hot water if the meat sauce is too dry.
Step 6: Cook until the pasta is cooked to your desired doneness. Adjust the flavour by adding more salt or pepper. Stir to combine.
Serve 7: Serve

This is the first time I’ve seen pasta cooked in the sauce itself. I’ve never tried it this way though (always boiling it first separately). One might need a pretty big pan in order for the dried pasta strands to be able to lie down flat. You’re not only a mama who likes quick and easy recipes, you like to cook them the fastest way possible too (with as little wash-up to do as possible)! ^_~
Kris, oh I though you have came across one pot pasta recipe like this before, as it’s quite a popular one pot dish. The pan I used was still not big enough for the long pasta, I’ll try shorter pasta next time. 😛
Who doesn’t like hassle free and minimal washing recipes? It’s definitely not me, haha!
Looks really delicious! I used to see one pot pasta recipes in a now inactive blog, The Domestic Goddess Wannabe. But I have yet to try because I don’t know how to adjust the liquids for the portion that I am cooking.
PH, more liquid is needed and the starch from the pasta will thicken up the sauce. I also added water in between as this was my first trying on one pot pasta recipe.
