Yen Can Cook ~ Minced Meat Kailan
An easy vegetable stir fry that can be whipped up quickly for a busy weekday night. Serve it with steamed rice for a complete and healthy meal. I skipped the marinate step in this recipe, but you can always marinate the minced meat with your usual marinade ingredients such as soy sauce, pepper or sesame oil.
Ingredients (Serve: 3-4)
300-400g Kailan
Note: Other green leafy vegetables can be used too, like Choy Sum and Bok Choy are ideal for this recipe.
200g minced meat (pork or chicken)
3 gloves garlic. minced
1 red chili/bid eye chili, sliced (optional)
1 tablespoon oyster sauce
A dash of pepper
Salt to taste
Cooking oil
To blanch the Kailan
1 teaspoon salt
1 teaspoon cooking oil

Step 1: Clean the Kailan and drain. Cut off the tough end of the stem then cut into small pieces. Separate the stem and leafy.
Step 2: In a wok, bring the water to boil then add in salt and cooking oil, blanch the cut Kailan (Step 1) until just cooked. Dish out and put into water to avoid further cooking.
Step 3: Discard the water in the wok. Heat the cooking oil then add in minced garlic and chili, saute till fragrant.
Step 4: Add in minced meat and cook until change colour, add in oyster sauce and pepper, stir to combine.
Step 5: Drain the Kailan (Step 2) and add into the wok, stir fry to combine. Add salt to taste.
Step 6: Serve.
