Yen Can Cook ~ Braised Radish with Minced Meat
December is typically a busy month with social engagements, shopping, baking, decorating and all the other “to-dos”. The festive season can can be stressful and overwhelming for many. To minimize the stress that can accompany the holidays, a proper and efficient meal planning definitely can help to reduce daily stress.
Although today’s recipe is nothing related to the Christmas season, the simplicity and wholesomeness certainly hit the spot for a less-stressed you! Radish with good source of Vitamins, cooked with minced pork (or any other proteins of your choice like chicken and beef), rendering a saucy dish that goes really well with a bowl of rice. Oh ya, instead of radish, you can use pumpkin too. -> Braised Pumpkin with Minced Meat
Ingredients (Serve: 3-4)
1 radish, approximate 800g to 1kg, sliced into 0.5cm thickness
500g minced pork/chicken/beef
4 tablespoons soy sauce
2 tablespoons sake
2 tablespoons mirin
1 tablespoon sugar
1/4 thumb-sized ginger, minced
250ml water/stock/dashi
1/2 tablespoon corn flour + 1/4 tablespoon water (cornstarch slurry)
Cooking oil
Salt and sugar to taste
Chopped spring onion for garnishing (optional)

Step 1: Heat cooking oil in a claypot/pot, saute minced ginger until fragrant.
Step 2: Add in the minced meat and cook until the meat turns color. Add in sliced radish, stir and cook for 1-2 minutes.
Step 3: Add in soy sauce, sake, mirin, sugar and water, bring the gravy to boil and simmer in low heat until the radish are soften.
Step 4: Add cornstarch slurry to thicken the gravy. (optional). Add sugar and salt to taste.
Step 5: Garnish with chopped spring onion and serve.
