Yen Can Cook ~ Water Chestnut and Snow Fungus Dessert
Overeating, oversnacking and sleep deprivation ( ̄o ̄) zzZ are some of the most common health issues during Chinese New Year. Those aforementioned health issues can result in “body heaty” in Traditional Chinese Medicine theory (TCM), which develops symptoms such as outbreak of acne, ulcers in the mouth, sore throat, bad breath and constipation. So according to TCM to restore the balance heatiness and coldness in our body, we need incorporating cooling food into your diet and today’s dessert soup (Tong Sui) with water chestnut as main ingredient is great to clear heat, relieve indigestion, cure sore throat as well as stop coughing and clear phlegm.
Ingredients (Serve: 3-4)
12-15 water chestnuts, peeled.
12-15g snow fungus/white fungus
10-12 red dates, clean and pitted
12g dried longan
60g rock sugar or to taste
1500ml water

Step 1: Soak the snow fungus in water until soft. Rinse and tear into smaller pieces. Set aside.
Step 2: In a pot, bring the water to boil, add in all ingredients except rock sugar.
Step 3: Turn to low heat and continue to cook for 30 to 40 minutes. Add rock sugar to taste.
Step 4: Serve hot or cold.

I’ve never really fancied this type of tong sui coz I don’t like snow fungus nor dried longan in a sugary sweet soup. 😛 I’m more of a “santan-type-of-girl”….kekeke! 😉
