Yen Can Cook ~ Pan Fried Chicken Patties

Pan fried chicken patties which are made with ground chicken and your preferred veggies is easy and versatile. These patties are lean protein that are perfect on their own or in burgers, sliders, wraps, or salads. They are a great option for freezer meals as well, just prepare in bulk,  place them in a sealable freezer bag and freeze them up to 3 months! 


 

Ingredients (for 10 patties)

1kg ground chicken

2 eggs

50g corn kernels

1 onion, chopped

2-3 stalks spring onion, chopped

Cooking oil

Seasoning

6 tablespoons mayonnaise

6 tablespoons breadcrumbs

2 teaspoons salt

1 teaspoon pepper

Step 1: Blanch the corn kernel, drain and set aside.

Step 2: Add ground chicken, egg, corn kernels (Step 1), chopped spring onion, and all seasoning to a large bowl. Mix until thoroughly combined, then shape the mixture into patty shape.

Step 3: Heat cooking oil in skillet over medium-high heat. Add patties to hot oil and cook 3 to 4 minutes. Flip and cook on other side an additional 3 to 4 minutes, or until patties are fully cooked.

Step 4: Remove from heat and serve as desired.

Note: Corn kernels and onion are optional ingredients. You replace them with finely chop mushrooms, spinach, or zucchini or even mix in a little parmesan or cheddar for cheesy chicken patties.
