Yen Can Cook ~ Spring Onion Chicken Stir Fry
This quick chicken stir-fry comes together in less than 20 minutes and only requires ingredients that you probably already have. I usually serve it with another veggie dish and steamed rice for a simple Chinese home-cooked meal during weeknights.
Ingredients (Serve: 3-4)
3 deboned chicken legs or any parts you prefer (approximately 600g), cut into bite size
4 stalks spring onion, green and white part separated, cut into 1.5cm length.
5 cloves garlic, chopped
Salt to taste
Marinade
2 tablespoons Chinese cooking wine
1 tablespoon salt
1/2 teaspoon pepper
1 teaspoon cornstarch
Sauce
1.5 tablespoon soy sauce
1/2 tablespoon oyster sauce
1 tablespoon sugar
1 teaspoon grated ginger
1 tablespoon water

Step 1: In a bowl, add in all ingredients of marinade, mix well. Put in the chicken pieces and marinate for at least 1/2 hour.
Step 2: In another bowl, add in all ingredients of sauce, mix well and set aside.
Step 3: Heat cooking oil in wok, pan fry the marinated chicken pieces (Step 1) until well browned on both sides. Add in chopped garlic, saute till fragrant.
Step 4: Pour in sauce mixture (Step 2) and stir fry to coat the chicken pieces. Add in white part of spring onion, cover the lid and let it simmer with low heat for 5-7 minutes.
Step 5: Open the lid and add in green part of spring onion, stir to mix with high heat.
Step 6: Add salt to taste and serve.
