Yen Can Cook ~ Roasted Duck Lettuce Wrap
I had some leftover roasted duck and decided to make in to a simple filling for Lettuce Wrap (Sang Choy Bao). The Lettuce Wrap can be served as an appetizer or main dish.
Lettuce wraps are exactly what they sound like: wraps that use lettuce in place of bread or tortillas. Sometimes the lettuce is rolled up just like a wrap, while other times it’s more like a taco or an open-faced sandwich. You can easily customize with ingredients you already have in your fridge or pantry. Here are few suggestions:-
Meat – Any protein such as ground chicken, beef, pork, turkey or vegetarian option like fried diced tofu.
Vegetables – you can easily add or swap out the vegetables with some of your own favorites like diced onions, green bell peppers. Just make sure to dice them up into smaller bite size pieces.
Dressing & Toppings – Hoisin Sauce + Sriracha dressing or store bought Sambal like THIS or THIS. My secret ingredient is chicken floss!
You can use a variety of different types of lettuce for this lettuce wraps including coral lettuce that I used or iceberg lettuce, romaine lettuce, bibb lettuce, butter lettuce or green leaf lettuce.
Ingredients (Serve: 3-4)
500g diced roasted duck
1/2 carrot, diced
1/2 cucumber, diced
300g preserved radish (Choy Poh)
1 tablespoon oyster sauce
1 teaspoon sugar
Salt to taste
Cooking oil

Step 1: Soak preserved radish in water for 3 minutes, drain off the water and diced. Set aside.
Step 2: Carefully separate lettuce leaves, keeping them as whole as possible. Rinse and dry. Chill in fridge while preparing the filling.
Step 3: Heat up cooking oil in a wok over medium heat, add in preserved radish (Step 1) and carrot, stir fry until the preserved radish are dry and fragrant (about 2-3 minutes).
Step 4: Add in diced roasted duck and continue to stir fry until the duck just starts to brown. Add in cucumber, oyster sauce and sugar, stir to combine for a about 30 seconds. Add salt to taste. Dish up.
Step 5: To serve, spoon several spoons of the roasted duck mixture into the center of a lettuce leaf, topped with dressing or sauce, if desired, voilà!
