Yen Can Cook ~ Baked Salmon with Avocado
A quick, easy, and effortless tin foil dinner, simply bake right in your foil packet! Light yet flavorful and delicious, most important it’s zero clean-up!!

Ingredients (Serve: 3-4)
400-450g Salmon fillet/Salmon steak
1 tomato, sliced or diced
150g button mushrooms (white or brown), sliced
1/2 yellow onion, sliced
2 avocados, sliced or diced
2 tablespoons white wine
1 tablespoon olive oil
Salt and black pepper to taste
Marinade
2 tablespoons white wine
1-2 sprig of fresh thyme/ 1 teaspoon dried thyme
Note: Can substitute with your preferred herbs.

1/2 teaspoon black pepper

Step 1: Cut Salmon into bite size. In a big bowl, put in Salmon then add in all ingredients of marinade, marinate for at least 15-20 minutes.
Step 2: Prepare a large piece of aluminum foil and brush with olive oil. Place the onion slices, followed by mushrooms then marinated salmon, tomatoes and avocados. Sprinkle with salt and black pepper and pour in 2 tablespoons of white wine.
Step 3: Fold up the edges of the foil over the salmon to create a packet, making sure to seal the edges.
Step 4: Preheat oven to 250ºC, bake the Salmon for 15-20 minutes, or until cooked through. Serve.

Sounds pretty easy. So just toss everything into the tin foil and use the oven right? Ok. I will give it a try. 🙂

I’ve done baked salmon in a foil too (but not with avocados though)….so easy with practically no washing to do…lol.
