Yen Can Cook ~ Braised Chicken With Potatoes
Today’s recipe is a very homey dish which I believe it is a very Chinese classic dish that many of you ate growing up.
Braised Chicken With Potatoes – soft and tender chicken pieces and potato chunks, with savoury gravy that goes well with hot steamed rice, make sure you cook extra rice when you cook this dish!
Ingredients (Serve: 3-4)
1kg chicken, cut into chunks
3 medium size potatoes, peeled and cut into chunks.
1/4 thumb-sized ginger, sliced
1 tablespoon Chinese cooking wine
Cooking oil
Salt to taste
Chopped spring onion for garnishing (optional)
Sauce
3 tablespoons oyster sauce
2 tablespoons soy sauce
1 tablespoon dark soy sauce
1 tablespoon sugar
1/2 teaspoon sesame oil
400ml water

Step 1: Soak the potato chunks in water for 5 minutes. Drained and set aside.
Step 2: In a big mixing bowl, add in and mix well all ingredients of marinade.
Step 3: Heat cooking oil in a pot or deep skillet, browned the potato chunks (Step 1), remove and set aside.
Step 4: In the same pot, pan fry the chicken until both sides are lightly browned. Push the chicken to one side, add in ginger and saute till fragrant. Add in the cooking wine and stir fry for 20 seconds.
Step 5: Add in the sauce mixture (Step 2), bring to a boil then add in browned potatoes (Step 3). Cover and simmer with medium low heat for 25-30 minutes, or until the chicken and potatoes are soften.
Note: You may add cornstarch slurry (cornstarch + water) on this step if you want a thicker sauce.
Step 6: Add salt to taste. Garnish with chopped spring union and serve.
