Yen Can Cook ~ Braised Chicken with Scallion Oil

Talking about braised chicken dishes, there are countless of versions to refer on the internet. Those braised chicken recipes are vary in terms of combination of ingredients to be braised together with the chicken (eg: chicken with potatoes or chicken with mushrooms) as well as the ingredients used in the braising sauce. 


Brown sauce with soy sauce and oyster sauce as its base is the most common braising sauce for any braised dishes. The flavour of the sauce is easy to palate yet savoury enough to go with multiple bowls of rice, certainly a fail-proof dish that well loved by everyone.

Today’s recipe is a oyster sauce + soy sauce base braised chicken too but the additional scallion oil imparts a mellow of fragrance to the dish. 

 

Ingredients (Serve: 3-4)

4 chicken drumsticks, cut into pieces

3 scallion/spring onions, cut into 5cm sections

1 thumb-sized ginger, sliced

1.5 tablespoons cooking oil

Marinade

1.5 tablespoons oyster sauce

2 tablespoons soy sauce

2 tablespoons cooking wine

1 tablespoon dark soy sauce

1/2 tablespoon sugar

A dash of pepper

Chopped spring onion for garnishing (optional)

Step 1:  In a bowl, combine all ingredients of marinade and mix until well combined.

Step 2: Marinate the chicken in the marinade for at least 1 hour  in refrigerator.

Step 3: Heat up a pot/wok/saucepan and add in the cooking oil,  then toss in the sliced ginger and white part of scallion and stir-fry until they are turning a little golden.

Step 4: Add in the green part of the scallion and continue to stir-fry until the both ginger and scallion are well browned and fragrant, but not burnt. Remove the ginger and scallion.

Step 5: Add in the marinated chicken (Step 2), stir fry until change colour. Pour in the marinade, bring to a boil then turn to low heat. 

Note: Bring the chicken wings to room temperature before cooking.

Step 6: Braised for 5 minutes – 8 minutes or until the sauce has thicken to your preferred consistency. Stir occasionally in between to avoid the chicken stick on the pot.

Step 7: Garnish with chopped spring onion and serve.
