Yen Can Cook ~ Braised Fish Head in Bean Paste Sauce
My sis bought a whole Salmon the other day and I shared half portion with her. The fish head was given to me because she said she doesn’t know what to do with it. (´^ω^`)
I cooked THIS and THIS previously, and today I’m going to try out a new recipe – Braised Fish Head in Bean Paste Sauce. Fish head chunks are coated with savoury bean paste sauce, together with bean curd puffs what fully absorb the flavours of the sauce when braising, it’s a dish that definitely commands another helping of rice. Mine is a rather dry version, put more water if you prefer a more saucy dish.
Ingredients (Serve: 3-4)
1 fish head (approximately 500g), cut into chunks or mix in fish meat as desired
4-5 bean curd puffs, halved
1 red onions, cut into wedges
3 cloves garlic, sliced
1/2 thumb-sized ginger, sliced
2 stalks spring onion, cut into to 3 inch length, white and green part separated
Cooking oil
Marinade
1/2 tablespoon oyster sauce
2 tablespoons soy sauce
2 tablespoons cooking wine
1 tablespoon corn flour
A dash of pepper
Sauce
1 tablespoon bean paste sauce (mine is with whole beans)
1/2 tablespoon dark soy sauce
1 cup water

Step 1: Clean the fish head chunks, pat dry and set aside.
Step 2: In a big mixing bowl, add in and mix well all ingredients of marinade. Put in the fish head chunks (Step 1) and marinate for 10-20 minutes.
Step 3: In another mixing bowl, add in and mix well all ingredients of sauce. Set aside.
Step 4: Heat up cooking oil in a deeper skillet or claypot, pan fried and browned both side of the marinated fish head (Step 2). Remove and set aside. Keep the remaining marinade.
Step 5: In the same skillet, add some oil, saute red onion, garlic, ginger and white part of spring onion till fragrant. Place the bean curd puffs on top of these aromatics then followed by pan fried fish head. Pour in sauce mixture (Step 3) and the remaining marinade. Covered and let it braised for 10 minutes.
Step 6: When the sauce has thicken to your preferred consistency, add in green part of spring onion, stir fry to mix. Serve.

Oh, your salmon fish head is quite small! If not for the tofu puffs, there’s hardly anything to eat from the fish head. I, too, wouldn’t know what to do with a salmon fish head…probably put it into the oven and salt-grill it (like in a Japanese eatery)! 😉
Kris, yeah, salted grilled is the easiest and simplest way to cook Salmon head but for the sake of sharing new recipe, I prepared this. 😛
I have eaten salmon head at Japanese restaurant and I like it very much. Cooked the way you did is also very good. My auntie once cooked asam pedas using salmon head and it turned out really well.
Kris, ah…I like Asam Pedas, perhaps next round I’ll cook this. I cooked fish head curry too, it’s equally delicious!
