Yen Can Cook ~ Braised Pork Chop with Apple

This might not look like the Braised Pork Chop with Apple that you have envisioned it to be and its visual appeal also not attractive, but I can promise it doesn’t compromise on the flavour. 👍


 

Ingredients (Serve: 3-4)

5pcs pork chops

1 big size apple, peeled, deseed and cut into thick wedges

1/4 thumb-sized ginger, sliced

3 cloves garlic, chopped

1/4 yellow onion, sliced

Cooking oil

Sauce

2 tablespoon soy sauce

1/2 tablespoon dark soy sauce

2 tablespoon oyster sauce

2 teaspoon Chinese cooking wine 

2 teaspoon rock sugar/sugar 

300ml cup water

Step 1: Pound both side of the pork chops with a pounder or the back of a knife to tenderize the meat. 

Tips to avoid pork chop from puffing up when pan frying: Make slits in the fat cap surrounding the meat about two inches apart from each other cutting up too but not through the meat. 

Step 2: In a bowl, mix to combine all ingredients of sauce. Set aside.

Step 3: Heat cooking oil in the pan, sear pork chops until golden brown on both sides, about 2–3 minutes per side. Remove from heat, sliced into 1cm thickness and set aside.

Note: You may keep the pork chop in whole in this step.

Step 4: In the same pan, add a bit more oil if needed, saute ginger, onion and garlic until fragrant. Pour in the sauce mixture (Step 2), then bring to a gentle simmer.

Step 5: Return pork chops to the pan, along with the sliced apple. Cover and simmer on low heat for 30–40 minutes, flipping once, until the pork is tender and sauce is thickened to your preferred consistency. 

Note: Add in HOT WATER if the sauce runs dry.

Step 6: Serve.

  • This is interesting, I don’t think I have eaten any braised dish that has apples as an ingredient. Judging from the other ingredients for this dish, I am sure it is very tasty. Must eat with rice!

  • I thought I’d be seeing pan-fried pork chop (whole) with apples in a western-type dish from the post title…instead, it looked typically Chinese like stir-fried pork braised in a dark sauce…lol. I, too, have never had apples with rice before…wonder what that tastes like. ^_~
