Yen Can Cook ~ Cabbage & Glass Noodles Stir Fry
An easy one-pot meals is just what you need for hectic weeknights. Tasty, low on mess and ready in 30 minutes or less! Glass noodles that soak up the delicious savoury sauce and crunchiness from the cabbage and carrot, it’s a perfect vegetarian one-pot dish or side dish to pair with rice. Make this your next meatless Monday meal!
Ingredients (Serve: 3-4)
600-700g cabbage, julienned
2 bundles glass noodle
1 carrot, julienned
2 stalks spring onion, cut into approximately 2 inches in length
2 eggs
Cooking oil
Sauce
2 tablespoons soy sauce
1/2 tablespoon dark soy sauce
1 tablespoon oyster sauce
(use vegetarian oyster sauce for vegetarian)
1 teaspoon sugar
20ml water

Step 1: Soak the glass noodles in cold water for 5 minutes until slightly softened. Drain and cut the glass noodles in half lengthwise. Set aside.
Step 2: Mix well all ingredients of sauce in a bowl.
Step 3: Whisk eggs in a bowl and heat oil in a wok. Cook eggs, scrambled, until light and fluffy. Remove from heat and separate eggs into small pieces. Set aside.
Step 4: Add more oil to the wok and turn to high heat, add in cabbage and carrot, stir fry for 1-2 minutes until the vegetables are slightly wilted.
Step 5: Turn to medium heat, add the sauce mixture (Step 2) and the glass noodles (Step 1). Stir and mix everything well. Lastly, add in scrambled egg and spring onion, stir to combine again.
Step 6: Serve.

Tekkaus, can add more glass noodles with lesser ingredients to make it a noodle dish as well.
I should have some glass noodle instead of just meehun.
