Yen Can Cook ~ Cauliflower Stir Fry in Tomato Sauce

Cauliflower is one of the vegetables that always in my grocery list because it is my low-carb diet’s good friend as it’s great for replacing carbs (eg: cauliflower rice). This veggie is versatile, non-starchy, and contains a lot of fiber and other beneficial nutrients.


From a culinary perspective, cauliflower is relatively bland on its own. So it’s important to  combine with the right ingredients for preparing and serving cauliflower, which able to enhance the flavour of that particular dish. Today’s recipe calls for tomatoes to pair with cauliflower to create a quick and simple vegetable stir fry. 

 

Ingredients (Serve: 3-4)

1 medium cauliflowersliced in small florets

2 tomatoes, diced

2 tablespoons water

Salt & sugar to taste

Cooking oil

Step 1: Step 1: Bring a pot of water to boil + 1 teaspoon of salt, blanch the cauliflower florets until your preferred texture (crunchy or soft). Drain and set aside.

Step 2: Heat cooking oil in a wok, add the tomatoes and cook until soften and juice releases.

Step 3: Add in water and blanched cauliflower florets (Step 1), stir fry to combine well. Let it cook for 1-2 minutes.

Step 4: Season with salt and sugar to taste. Serve.
