Yen Can Cook ~ Chestnuts & Chinese Yam Soup
Do you like chestnuts? Yes, I like, especially chestnut desserts (think mont blanc). (´ρ`)
No, I’m not going to bake a mont blanc today because it it definitely beyond my ability (≧▽≦), but I’m going to share a soup recipe that using chestnuts as one of the ingredients.
Chestnuts, despite their small size, chestnuts are packed with a variety of nutrients. Chestnuts are rich in vitamin C, which makes them unique among nuts. They’re also rich in antioxidant properties to improved immune function and reduced inflammation.
Other chestnut recipe ~ Braised Chicken with Chestnuts
Ingredients (Serve: 3-4)
400g chicken/pork soup bones/pork ribs
A medium size Chinese Yam (500 – 700g), peeled and cut into large chunks
8-10 chestnuts (dried or fresh)
15g Gordon Euryale Seed 芡实 (QianShi), can purchase from Chinese herbal shop
15g dried lotus seeds
3 dried figs
2500ml water
salt to taste
To blanch the chicken (optional)
1 tablespoon cooking wine
A few slices of ginger

Step 1: Put chicken into a pot of water and bring to a boil, to remove blood and impurities. Remove, drain and set aside.
Step 2: Put all the ingredients except salt into a pot and add in water until enough to immerse all the ingredients. Bring to a boil and lower the heat and let the soup simmer for 2-3 hours.
Step 3: Season with salt and serve.
