Yen Can Cook ~ Dried Sea Coconut & Dendrobium Soup

It’s that time of the year again: Crazy hot weather! (゚A゚;)

Malaysia is experiencing the South-west Monsoon, which results in a hot and dry climate with some locations recording temperatures as high as 37°C! People are advised to keep hydrated and watch out for symptoms of heat-related illness caused by dehydration and loss of electrolytes in the current heatwave nationwide.

Other than avoid outdoor activities during peak heat weather conditions, constant showering to reduce body temperature and drink plenty of fluids, I also believe that adequate intake of Chinese medicine remedies with “body-cooling” benefit can help to balance the excess body heat.

Today’s recipe calls for dried sea coconut which helps nourish the lungs, relieve coughing and dispels internal heatiness. Another special ingredient is Dendrobium, which is a type of orchid. The plant consists of a long, thin stem, which is golden yellow in color, with a yellow or pink flower at the end. The stem is used in traditional Chinese remedies.

In traditional Chinese medicine, Dendrobium (石斛 shí hú) is used primarily to replenish fluids. It is commonly used as a yin tonic to moisten the stomach and lungs. It is also very effective for treating conditions such as dry mouth, stomach pain, mouth sores, sunstroke, and other conditions caused by dry weather, pollution or smoke.

Ingredients (Serve: 3-4)

Clockwise from top center:-

10g lotus seeds

30g dried sea coconut

10g Ophiogon (Mai Dong)

A handful of wolfberries (Goji)

20g Solomon’s Seal (Yuk Zhu)

7-8 red dates, de-seeded

Center: 5g Dendrobium

400g pork ribs/pork soup bones/chicken

2500ml water

Salt to taste

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Rinse to clean all the Chinese herbal ingredients. Drain and set aside.
Step 2: Put pork ribs/pork soup bones/chicken into a pot of water and bring to a boil, to remove blood and impurities. Remove, drain and set aside.
Step 3: Put all the ingredients (except wolfberries & salt) into a pot and add in water until enough to immerse all the ingredients. Bring to a boil and lower the heat and let the soup simmer for 2-3 hours.
Step 4: Put in wolfberries, boil for extra 5 minutes then season with salt and serve.
HAPPY COOKING!  #stayhealthy #staysafe
