Yen Can Cook ~ Enoki Mushroom & Fish Paste Patty
I never thought Enoki Mushroom can be made into patty! Normally how do you cook Enoki Mushrooms? Steamed with garlic, deep fried in batter, vegetables stir fry and add into soup are some of the different ways to cook Enoki Mushrooms.
Enoki Mushrooms, its Chinese name Jin Zhen Gu (金针菇), which literally means golden noodle mushroom, somehow describes its unique look: a cluster of long, thin white stems with tiny white caps on the top. Unlike popular Asian mushrooms like shiitake or king oyster, Enoki Mushroom has a rather mild flavour. Enoki mushrooms are full of nutrients that have anti-cancer properties and immune-boosting benefits.
Ingredients (Serve: 3-4)
1 packet Enoki Mushroom
350g-400g prawn paste
1 stalk spring onion, chopped
1 egg
1 tablespoon multi-purpose flour
Cooking oil
Black sesame for garnishing
Seasoning
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 teaspoon black pepper

Step 1: Trim the bottom of the Enoki Mushrooms, then cut into 4 parts short length.
Step 2: In a big bowl, add in prawns paste, Enoki Mushrooms (Step 1), egg, chopped spring onion, multi-purpose flour and all the ingredients of seasoning, mix everything until combined. Whip the mixture with chopsticks in one direction until it resembles a uniform sticky, smooth paste.
Step 3: Roll the mixture into a ball shape, then flatten into disk.
Step 4: Heat up cooking oil in a pan and put in the patties (Step 3). Sprinkle black sesame on top of the patties (optional). Pan fry for about 1-1.5 minutes or until the bottom part turns golden brown. Flip it over and pan fry minutes until the bottom part turns golden brown.
Step 5: Serve.

Deep fried enoki mushrooms is delicious (from restaurants lah) but at home, I usually stir-fry them or add them to soups. Your fish (or is it prawn?) paste patty looks equally delicious and the inclusion of black sesame seeds will make your patty very fragrant (I can eat all that by myself)…hehehe! 😉
Kris, I used prawn paste this round, I believe fish paste works the same too.
