Yen Can Cook: Eryngii Mushroom with Sausage
I’ve bought a packet of baby Eryngii Mushroom last week and normally I will just simply stir fry them with some garlic or baked with butter in an aluminium foil wrap. Since I knew it’s not good to use alumimium foil for cooking from HERE, so I tried to Google recipes to prepare my Eryngii Mushroom. There are numerous of recipes online but this suit me well because it only need 3 ingredients which I had in my pantry!
Ingredients

Eryngii Mushroom, diced
Sausages (Chinese sausages “Lap Cheong” or Taiwanese sausages), sliced
Oyster sauce
Sugar to taste
Cooking oil
Water
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Heat oil in a skillet, pan fry the sausages until cooked, set aside.
Step 2: In the same skillet, cook the diced mushrooms till slightly soften.
Step 3: Add in cooked sausages (Step 1), pour in water and oyster sauce and continue simmer till the mushrooms are fully soften.
Step 4: Add sugar to taste.
Tips: Amount of water and oyster sauce is adjustable according to preference. Don’t cook too long if you like more gravy or else cook longer time or add cornstarch to thicken the sauce.

I use Taiwanese sausage this round since I run out of Lap Cheong at my pantry, next time I’ll try Lap Cheong π

Oh, I’ve never thought of frying eryngii with lap cheong…this is a 2-ingredient dish (the oyster sauce don’t count since it’s a staple in our kitchen…..kekeke!) π The eryngii mushrooms have to be soft, I recently had one (at a restaurant) which wasn’t.
