Yen Can Cook ~ Fish Fillet in Tomato Broth
Super quick and easy one pot meal for any time of the day! Just TWO main ingredients are needed – tomatoes & fish fillet, and you can add in any other vegetables, mushrooms or even noodles to make it a complete meal!
Ingredients (Serve: 3-4)
400g fish fillet (any white flesh fish such as Tilapia, Grouper, Halibut, Patin, & etc)
3 tomatoes, cut into small wedges
1/2 thumb-sized ginger, julliened
1 tablespoon oyster sauce
1 tablespoon tomato sauce
1200ml water
Cooking oil
Salt and sugar to taste
Chopped spring onion for garnishing (optional)
Marinade
1/2 teaspoon salt
1/4 teaspoon cooking oil
A dash of white pepper
1/4 teaspoon corn flour
1 egg white
To blanch fish fillet
1 tablespoon cooking wine
1 thumb-sized ginger, sliced

Step 1: In a bowl, add in all ingredients of marinade, mix to combine. Put in the fish fillet and marinate for 10 minutes.
Step 2: Bring a pot of water to a boil, blanch the marinated fish fillet for 1-2 minutes. Drain and set aside.
Step 3: Heat up cooking oil in pot over high heat, saute the julliened ginger until fragrant.
Step 4: Add in tomato wedges, stir fry and cook until soften and juices released. Add in water, oyster sauce and tomato sauce, stir to mix and bring to a boil.
Step 5: Add in blanched fish fillet (Step 2) and let it cook for another 1-2 minutes.
Note: You may add in extra mushrooms, vegetables or cooked noodles in this stage too.
Step 6: Sprinkle with chopped spring onion and serve.

I do like tomato soup except for the sugar that’s in tomato sauce…hehe. >.< It's very difficult to find fish fillet already filleted here (especially fresh ones). Buy frozen ones and some turn out to be a bit fishy. Did you use fresh or frozen ones? 😉
Kris, I used frozen one and unfortunately it had that fishy taste that you mentioned. >_< I think you can ask help from your fishmongers (if you're close enough with them :P) to slice the fish.
