Yen Can Cook ~ Fish Fillet in Tomato Sauce
This Fish Fillet in Tomato Sauce 茄汁鱼片 is surely a crowd pleasing dish that will make everyone happy. Boneless fried fish fillet coated in appetizing and tangy tomato sauce, what’s not to like?
Ingredients (Serve: 3-4)
300g fish fillet (Patin, dory, grouper, tilapia, thread-fin, snapper or any white fish fillet)
50g corn starch
Cooking oil
Spring onion (garnishing)
Marinade
10g salt
10ml cooking wine
1 egg white
Tomato sauce
50g tomato sauce
25g sugar
20ml vinegar
10ml water
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Mix all the ingredients of marinade in a bowl and marinate the fish slices for 20-30 minutes.
Step 2: Coat the marinated fish fillets (Step 1) with corn starch.
Step 3: Mix all the ingredients of tomato sauce in a bowl and set aside.
Step 4: Heat oil in a frying-pan or wok over medium heat. Pan fry or deep fry fish fillets until both sides are lightly brown. Dish up and set aside.
Step 5: Pour away the oil in the pan, add in the tomato sauce mixture (Step 3) and bring to a boil. Add in the fried fish fillets and toss well until the fish fillets are evenly coated with the tomato sauce.
Step 6: Garnish with chopped spring onion and serve.

Kris, I used Patin fish fillet for this dish. If there are other dishes, I’m sure you won’t be eating too much for this dish, right? o.O
