Yen Can Cook: Fried Fermented Bean Curd Chicken (Philips Air Fryer method attached)

Fermented bean curd is a type of preserved tofu made from soybeans. The ingredients typically are soybeans, salt, rice wine and sesame oil or vinegar, and are sold in jars containing blocks 2- to 4-cm square by 1 to 2 cm thick soaked in brine with select flavorings.


There are 2 varieties, white and red. The white fermented bean curd (Fu Ru 腐乳 in Mandarin) is usually consumed with porridge. The Red fermented bean curd (Nan Ru 南乳 in Mandarin) incorporates red yeast rice with the brining liquor for a deep-red color and I’m using the red Red fermented bean curd for this recipe.

Ingredients

6 pieces of chicken wings (drumettes and mid-joint)
3 pieces red fermented bean curd cubes mashed with a fork
3 tablespoon red fermented bean curd sauce
3 tablespoon corn flour
2 teaspoon minced garlic
1 tablespoon Chinese cooking wine
1 tablespoon oyster sauce
2 teaspoon sugar
Oil for deep-frying

Step 1: Marinate the chicken wings with all the ingredients except the corn flour for about 4 hours. For best results, marinade the chicken wings over night in the fridge (either in a sealed ziplock bag or covered bowl)

Step 2: Before deep-frying, add corn flour to the marinade chicken. Stir to coat evenly until the flour is dissolved completely into the marinade and forms a sticky coat on the chicken.

Step 3: Heat oil in a wok fried the chicken until golden brown on both side. Turn the heat up slightly during the last minute of deep-frying to allow the chicken to crisp well. Drain excess oil on paper towels before serving.

Philips Air Fryer method: Pre-heat air fryer at 180ºC. Lightly brush the grill with cooking oil. Place chicken wings and air fry it for 8 minutes on each side.
