Yen Can Cook: German Cookies
This supposed to be a CNY cookie but unfortunately I had not enough time to share the recipe before CNY. These German cookies have a delicate melt-in-your mouth texture and full of fragrant buttery aroma.
Ingredients
125g butter
40g icing sugar, sifted
125g potato starch
80g superfine flour
(Make 60 ± cookies)

Step 1: Beat butter and icing sugar till fluffy and lighter in colour.
Step 2: Sift in potato starch and flour, mix to form a soft dough.
Step 3: Roll into small balls (about 2cm in diameter), arrange on lined baking pan.
Tip: If the dough is too sticky to be shaped, put into fridge for 10 minutes.
Step 4: Press the ball dough to form a disc shape.
Step 5: Lightly press the disc dough with a fork (dip the fork in water after each press to prevent cookie dough from sticking to the fork).
Step 6: Bake in preheated oven at 170 ºC for 15 minutes.
Tip: Don’t over-baked until golden brown, the colour of the cookies should be in pale cream colour.
Step 7: Remove the cookies from oven and let cool before store into airtight container.

I do that to my cookies too….pressing them down with a floured fork directly from the small dough balls formed (this way, you can actually skip step 4). Your cookie disc looks almost like a macaroon. Why are they called German cookies?
The name…. I really no idea at all lor 😛
