Yen Can Cook: Hot & Sour Prawns 笑哈哈迎猴年

During Chinese New Year, prawns are commonly served as prawns (ha) have connotations of happiness (ha ha siew means laughter), the word for prawn sounds like “ha” in Cantonese and some other Chinese dialects, hence symbolizing laughter (笑 “哈哈”) and happiness.


Today I’m going to share a popular CNY dish recipe of hot & sour prawns which is quite easy to prepare. Here we go!

Ingredients

300g prawns

5 gloves garlic, minced

2 slices ginger, minced

3 tablespoons ketchup

2 tablespoon Lingham Ginger Chili Sauce

2 teaspoons sugar

3 teaspoons salt

1 teaspoon pepper

Oil

Spring onion for garnishing

Step 1: Trim the head and leg of the prawns.

Step 2: Slide the point of a toothpick in the 2/3 of the prawn underneath the vein (between the shell sections where it’s soft) Then gently pull the vein out.

 

Step 3: Marinade the prawns with salt and pepper for 20 minutes.

Step 4: Heat oil in a frying pan then add in prawns. Pan fried till fully cooked, set aside.

Step 5: In a bowl, mix ketchup, Lingham Ginger Chili sauce and sugar.

Step 6: Heat oil in a wok, stir fry garlic and ginger till fragrant. Add in mixture of step 5, cook for 1 minutes then add in prawns (step 4). Evenly coat the prawns with the gravy, simmer for another 3 minutes.

Step 5: Serve and sprinkle chopped spring onion for garnishing.
