Today’s recipe is a simple and quick omelet dish that everyone can cook it at home. Let’s start!
Lady Finger or Okra, is a flowering plant in the mallow family. It has edible green seed pods. The pods of the plant (which is the lady finger) are mucilaginous, resulting in the characteristic “goo” or slime when the seed pods are cooked; the mucilage contains soluble fiber. It can be cooked, pickled, eaten raw, or included in salads.

Ingredients (Serve:3-4)
200g – 220g lady finger
4 eggs
1/2 teaspoon salt, or to taste
1/4 teaspoon pepper, or to taste
Cooking oil

Step 1: Bring a pot of water to boil, blanch the lady finger until fully cooked. Drain and thinly sliced. Set aside.
Ste 2: In a bowl, combine and mix well egg, salt, and pepper. Add in sliced lady finger, mix well.
Step 3: Heat cooking oil in a pan/wok, pour in egg mixture (Step 2).
Step 4: Allow egg to cook and set for about 2 to 3 minutes. Then flip over and fry till both sides are golden brown.
Step 5: Serve.
