Yen Can Cook ~ Lemon Chicken

Lemon Chicken, a popular dish that is served at Chinese restaurants for good reason. Chicken pieces deep fried to golden brown served with zesty lemon sauce that add a refreshing flavor to this vibrant dish.


 

Ingredients (Serve: 3-4)

600g chicken breast/thigh, cut into thin strips or small cubes

Cooking oil

Spring onion for garnishing (optional)

Marinade

2 teaspoons Chinese Shaoxing wine/Chinese cooking wine

3 teaspoons soy sauce

1 teaspoon sesame oil

1.5 teaspoons corn flour 

Coating

90g all purpose flour

60g corn flour

1 teaspoon salt

1 teaspoon baking powder

Sauce

60ml lemon juice

200ml water 

60g caster sugar

2 teaspoons rice vinegar

1 tablespoon Chinese Shaoxing wine/ Chinese cooking wine

2 teaspoons finely grated lemon zest

1 tablespoon corn flour + 1.5 tablespoons water (cornstarch slurry)

Steps 1: In a bowl add in all the marinade ingredients, mix to combine. Add in chicken pieces, rub the marinade over the chicken. Leave to marinate for 10 – 20 minutes.

Step 2: In a plate, combine all the coating ingredients, set aside. Take out the marinated chicken (Step 1) and bring to room temperature.

Step 3: Heat up cooking oil in wok. Dip the marinated chicken into the coating mixture (Step 2), dust off the excess flour. Deep-fry the chicken until golden brown. Remove, drain and set aside.
Step 4: Using the same wok for frying chicken, pour out all oil. Add in all the ingredients for the sauce EXCEPT cornstarch slurry, bring to a simmer over medium heat, then reduce the heat to medium-low. Pour in cornstarch slurry, simmer for 1 minute or until thickened to your preferred consistency. 

Step 5: Drizzle the lemon sauce (Step 4) on the fried chicken pieces (Step 3), garnish with the spring onion. Serve.
