Yen Can Cook ~ Mango Sticky Rice
For the Klang Valley and Malaysia, the first week after the upliftment of interstate travel had seen massive inflow of domestic tourist at Langkawi, Melaka and many more. That’s rather unsurprising as its in human nature not to be “caged”. However, we will still wait with unabated breath till we can travel overseas to be immersed with foreign culture and food!
While we wait, let me introduce you guys an easy to make Mango Sticky Rice, a traditional desserts from our neighbour country – Thailand. Made with glutinous rice, fresh mango and coconut milk, although originating in Thailand, it is also consumed in other countries in Southeast Asia including Laos, Cambodia and Vietnam.
Ingredients (Serve: 3-4)
200g glutinuous rice
2 ripe mangoes, peeled, pitted, and cut into slices
250ml coconut milk
40g sugar (mine is less sweet version, increase the amount to 50g if you prefer sweeter)
1/2 teaspoon salt
Toasted sesame seeds for garnishing (optional)

Step 1: Wash and soak the glutinous rice in water for a few hours or overnight.
Step 2: Drain the rice with a wire mesh strainer. Prepare steamer and steam the rice without adding water. Steam the glutinous rice for about 25 minutes or until it is tender and translucent.
Step 3: While waiting for the rice to be steamed, heat the coconut milk gently in a small pot. Add the sugar and salt and stir until the sugar is dissolved. Once the sugar is dissolved, remove from heat.
Step 4: Once the rice is done, transfer the rice to a large mixing bowl.
Step 5: Reserve 1/3 portion of coconut milk mixture (Step 3) for serving and add the balance gradually to the glutinous rice (Step 4). Do this step while both are still warm to make the coconut milk easier to absorb thoroughly to the rice.
Step 6: Sprinkle toasted sesame seeds on the rice and serve with chilled mangoes. Drizzle the rice with the reserved coconut milk mixture if you prefer a more moist version.

Kudos for making mango rose though when it comes to mango sticky rice, I like my mango slices thick & chunky.

Nice! I love this dessert but since I am the only one who loves this, it is hard to make a small portion. Like Kris. I had trouble leaving comments (besides preferring thick and chunky mango slices) because the captcha didn’t match. So I gave up!
