Yen Can Cook ~ Marmite Pork Ribs

This Marmite Pork Ribs 妈蜜排骨 is a popular dish at Chinese restaurant or the roadside stir-fry joints (Dai Chow) Malaysia, and our family is one of its fans. Deep-fried pork rib, contrasted with, and smothered in, an addictive sticky umami sauce with lovely notes of sweet and savoury, a sure winner with everyone of all ages. You can also cook with chicken or pork chop.


 

Ingredients (Serve: 3-4)

500g pork ribs, cleaned and drained

Salt & sugar to taste

Cooking oil for deep-frying

White sesame for garnishing (optional)

Marinade
1 tablespoon soy sauce
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon pepper
1 tablespoon rice wine
1 tablespoon cornflour
1 egg white
Sauce
1 teaspoon Marmite
1 tablespoon fish sauce
1 tablespoon soy sauce
2 tablespoon honey
1 teaspoon sesame oil

Step 1: In a bowl add in all the marinade ingredients, mix to combine. Add in pork ribs, mix and let all the pork ribs fully absorbed the marinade. Leave to marinate for at least 1 hour.

Step 2: Heat up cooking oil in wok, deep fry the marinated pork ribs (Step 1) in batches until golden and fully cooked. Remove, drain and set aside.

Note: Ensure that pork ribs are brought to room temperature before frying.

Step 3: Using the same wok for frying pork ribs, pour out the excessive oil and leave some oil on the wok. Add in all the ingredients for the sauce, bring to a boil over medium heat, simmer until the sauce is thicken and becomes glossy, stir constantly to prevent burning. 

Step 4: Taste the sauce, add salt and sugar if necessary. Add in the deep fried pork ribs (Step 2), stir to coat the pork ribs evenly with the sauce. 

Step 5: Sprinkle with sesame seeds and serve.
