Yen Can Cook: Minced Meat with Tomato
Like everyone else, there are more days than I would like to admit where I was too tired to be bothered to cook after a hectic day at work. And on these days, I fall back to recipes that are simple and comforting, this braised minced pork with tomato is one of those recipes that I like to prepare. The dish is easy and so delicious served on rice or noodles. I’ll also cook in big batch to keep it in freezer, and it’s definitely your savior when lazy bugs bite or you run out of idea what to cook.
Ingredients (Serve: 3-4)
450g minced pork (can be substituted with chicken)
2 tomatoes, diced
3 shallots, minced
1 tablespoon sweet bean sauce甜面酱
3 tablespoons oyster sauce
1 tablespoon rice wine
A dash of white pepper
Sugar to taste
Cooking oil

Step 1: Heat pan with oil cook the minced meat until change colour (80% cooked), dish up and set aside.
Step 2: In the same pan, heat up some oil again saute minced shallot about 1 minute or till fragrant.
Step 3: Add in minced meat (Step 1), mix well with shallot (Step 2) then add the diced tomatoes. Stir fry then cook till the tomatoes are soften.
Step 4: Add in sweet bean sauce, oyster sauce, rice wine and white pepper, cooked till the sauce mixture slightly thicken. Stir occasionally to prevent burning.
Step 5: Add sugar to taste. Served with rice or noodles.

Minced meat is such a versatile ingredient. It can be cooked with so many things (although I’ve never paired it with tomatoes). It’s great for freezing and a saviour when we’re hard-pressed for time to cook. I do that all the time too.
What sweet bean sauce is that? I also love cooking with minced pork, can do macam-macam with it.
