Yen Can Cook ~ Monkey Head Mushrooms & Green Papaya Soup (Vegetarian)


Monkey Head Mushroom (猴頭菇), also called the lion’s mane mushroom or the bearded tooth mushroom, which has a furry looking and it’s color ranges from white to dark brown, hence the name given.

They are usually sold in dried (dehydrated) form and have both culinary and medical uses in Asian countries like China, India, Japan and Korea. The mushrooms contain bioactive substances that have beneficial effects on the body, especially the brain, heart and gut.

They have meaty texture and often serve as a meat-substitute in Chinese vegetarian cuisine.

 

Ingredients (Serve: 3-4)

Green papaya (about 200-300g), peeled, seeds removed and cut into big chunks

4-5 Monkey Head Mushroom

One handful of cashew nuts

6 fried figs

Handful of red dates, de-seeded

1 inch of ginger, sliced

2500ml water

Salt to taste

Step 1: Soak the Monkey Head Mushrooms in water for 30 minutes to soften them. Rinse and gently squeeze out the water from the mushroom, repeat this step for several times until the water is clear.

Step 2: Put all the ingredients (except salt) into a pot of water, bring to a boil. Lower the heat and let the soup simmer for for 2-3 hours.

Step 3: Add salt to taste & serve.
