Yen Can Cook: Mushroom Soup

Mushroom soup is one of the common soup can be found at any western restaurant. It is a favourite choices of many people included myself. Prepare this popular soup at home is not as difficult as you think, one can easily whip out a chunky and creamy mushroom soup in less than a hour. Tempted to try? Let’s go!


 

Ingredients

300 – 400g of assorted mushrooms

1 small onion (finely chopped)

70g unsalted butter

1.5 cups chicken or vegetable stock

1teaspoon dried thyme

1/2 cup heavy whipping cream

Salt and pepper to taste

Step 1:Melt the butter in a saucepan and lightly saute the chopped onions until soft and translucent .

Step 2:Add the mushrooms and saute over moderate heat for 10 minutes.

Step 3: Stir in the chicken stock and the dried thyme and bring to a boil.

Reduce the heat and simmer for 20 minutes.
Step 4: Let the soup cool for a few minutes, then transfer to the blender. Blend at high speed until smooth.

Step5: Return the mix to the saucepan, bring up to a simmer again. Add in whipped cream and season with salt and pepper.

Step 6: Mushroom soup is ready to be served.
