Yen Can Cook ~ One Pot Creamy Curry Prawns Pasta

This easy creamy curry prawns pasta is the perfect meal for a busy weeknight. It is effortless to make, and you can dish up this quick and satisfying dinner in about 30 minutes. If you’re not a fan of prawns, other proteins such as boneless chicken cubes, sausages or even minced beef. You also can make it into a vegetarian version with mushrooms, to replace the prawns.


 

Ingredients (Serve: 3-4)

400g pasta

12-15pcs medium sized prawns, head and shells removed (save to render prawn oil) , leave the tail intact

1 yellow onion, sliced

4 cloves garlic, minced

4 cubes Japanese curry cubes

400ml milk

100ml cooking cream

Note: Adjust the ratio of milk and cooking cream to your preferred creaminess.

1/2 teaspoon black pepper

Cooking oil

Salt to taste

Grated Parmesan cheese (optional)

Marinade

1/2 teaspoon salt

1/4 teaspoon pepper

Step 1: In a bowl add in prawns, salt and pepper, mix well.  Leave to marinate for 20 minutes in fridge.

Step 2: Cook the pasta in salted water according to the package instructions, MINUS 1 minute. Drain and set aside. 

Step 3: Heat up cooking oil in skillet, cook prawn shells and heads on low heat for 20 minutes. Stir and crush the heads and shells (with a spoon/spatula) periodically to release flavour. Remove the prawn heads and shells, pan fry the prawns until both sides are browned. Remove and set aside.

Step 4: In the same skillet, add in sliced onion, sauté till soften then add in minced garlic, sauté fill fragrant. 

Step 5: Pour in milk and curry cubes (take out some slightly heated milk and put into a bowl, dissolve the curry cubes in the bowl then add into the the skillet.), stir to mix well, then add in pasta (Step 2).

Step 6: Add in cooking cream and mix until the pasta is evenly coated with the sauce. Add in pan fried prawns (Step 3) and mix to combine.

Step 7: Add in black pepper and salt to taste. Sprinkle with grated Parmesan cheese and serve.
