Yen Can Cook ~ Oyakodon (Chicken & Egg Bowl)
Oyakodon (親子丼), a classic Japanese Donburi (rice bowl), literally means “Parent-and-Child Donburi” in Japanese, which is a reference to two of the dish’s main ingredients: chicken and egg. The rice bowl is topped with with tender chicken pieces, onion and egg simmered in a flavourful stock. It’s a satisfying comfort food that’s simple and easy to prepare at home, with minimal ingredients, in about 20 minutes.
Ingredients (Serve: 4)
4 boneless chicken thigh
4 eggs, beaten
1 onion, sliced
4 servings of cooked rice
Furikake/chopped spring onion for garnishing (optional)
Sauce
230ml Dashi
3 tablespoon soy sauce
3 tablespoon mirin
3 tablespoon sake
3 tablespoon sugar

Step 1: Pour all ingredients for sauce into a pan then add in sliced onion in single layer then add chicken pieces on top of the onion layer.
Step 2: Bring the sauce mixture to a boil, and let simmer under medium heat. Cover and cook for about 5 minutes or until chicken pieces change colour. and the onion is tender. Skim off the scum on the surface.
Step 3: Pour the beaten egg over the chicken and continue cook with lid on until the egg is cooked to your preferred doneness.
Step 4: To serve, place cooked rice in a bowl then place the chicken, onion, egg and sauce on top.
Step 5: Sprinkle with Furikake/chopped spring onion and serve.
Note: Divide your chicken pieces, sauce mixture, egg and onion into the portions according to your pan size, eg. divide your ingredients into 2 portions if your pan can cook 2 portions in one go.

Like the chukadon I made the other day, I would enjoy this oyakodon too…..except I’d like my eggs less cooked, a little runnier for that fluffy texture (like scrambled eggs)….hee..hee! ^_*
