Yen Can Cook ~ Pickled White Radish
If you like Korean fried chicken, this pickled white radish certainly no stranger to you. Always served as condiment along with Korean fried chicken, the crunchy and vinegary diced white radishes act perfectly to cut through the meatiness and oiliness of the fried chicken. This side dish also well complement any other spicy or meaty dishes for a much needed refreshing note to the palate.
Ingredients
450g peeled white radish, cut into 1/2 inch cubes
50g sugar (mine is less sweet, you may increase the amount as per desired)
85ml white vinegar
1 tablespoon salt

Step 1: In a big mixing bowl, combine salt, vinegar and sugar. Mix well until salt and sugar are dissolved.
Step 2: Add in the diced radish and stir to mix well with the pickling liquid.
Step 3: Transfer the white radish together with the pickling liquid into an airtight container or glass jar. Store it in the fridge for at least 24 hours.
