Yen Can Cook: Potato Pancake

Do you like root vegetables? Potato, sweet potato, carrot, onion, beet, just to name a few. This may not sound like a very appetizing list of vegetables, but trust me, it’s all about how they are prepared! Think potato soup, carrot cake, roasted sweet potatoes, gratins and hash brown, they sound really yummy right? Here’s another simple recipe in form of potato pancake or potato omelet, great for kid who don’t like potato. It can be a vegetarian dish too if you replace the butter in the recipe with vegetable oil.


 

Ingredients (Serve: 2-3)

2 medium potatoes

4 tablespoons corn kernels (fresh or canned)

3 eggs

2 teaspoons butter

Salt and black pepper to taste

Step 1: Peel the skin of the potatoes and grate/cut them into thin strips.

Step 2: Heat a skillet then melt the butter, put in grated potatoes. Stir fry with low heat until slight golden brown. Add in corn kernels, season with black pepper and salt. Stir fry for 1-2 minutes, dish up and set aside.

Note: Cook the corn kernels if you are using fresh one.

Step 3: Beat the egg in a large bowl.

 

Step 4: Let the potato (Step 2) slightly cool down then add into the beaten egg (Step 3). Mix until well combined.

 

Step 5: Heat up the skillet, turn to low heat, scoop the mixture onto the skillet. Brown on both sides and serve hot.
