Yen Can Cook: Pumpkin Tomato Stir Fry
What will you do if you have 1/4 of pumpkin and a tomato left in your fridge? I accidentally created this when I had aforementioned ingredients. The flavor was nice with appetizing tomato tang, went well with bowl of hot white rice.
Ingredients
1/4 pumpkin, sliced
1 tomato, cut into chunks
2 eggs
1 tablespoon tomato sauce
Cooking oil
Salt and sugar to taste
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Beat 2 eggs, stir fry till fully cooked and cut into small pieces. Set aside.
Step 2: Heat the wok, put in oil and pumpkin slices and stir fry for a few minutes.
Step 3: Add in tomato chunks and continue stir fry then add in tomato sauce. Add water enough to cover the ingredients, simmer till the pumpkin soften.
Step 4: Add in egg pieces (Step 1) and stir fry, seasons with salt and sugar to your preference.
Step 5: Serve.

Yes for Tomatoes…. big NO for pumpkin, never liked pumpkin as an ingredient for savory dish. I’m okay with Pumpkin desserts though
Weird person, haha! But I’m same type with u too, I don’t like cooked garlic but ok with raw garlic in chili dipping sauce >_<

That’s a pretty interesting dish, I tried pumpkin + salted egg yolk and it was best!
I never try to cook with salted egg yolk, maybe I should try it out one day 🙂
That’s how some dishes are created….we throw whatever’s left in the fridge…hehe! ;D
EWEW, sometimes it can be a disaster too >_<
Something interesting for me… Hmm..
Just I am not really a big fan of pumpkin… :p
