Yen Can Cook ~ Sautéed Shrimp with Zucchini
Colors have a strong emotional impact on us, especially when it comes to food. When food is attractively presented with flourishes of rich colour, it helps to stimulate one’s appetite. Today’s dish with vibrant colour of yellow, orange and red can definitely stimulates many senses, which lead directly to your appetite!
Ingredients (Serve: 3-4)
600g shrimps
1 zucchini, cut into small chunks
10-12 cherry tomatoes, halved
2 cloves garlic, sliced
A handful of sweet basil leaves
Salt and black pepper to taste
Olive oil
Marinade
1 tablespoon cooking wine
1/4 teaspoon salt
1/4 teaspoon pepper

Step 1: Remove the head and shell of the shrimps, with tail remained. Devein and clean, marinate with marinade for 20 minutes.
Step 2: Heat olive oil in a pan, saute the shrimps till just cooked. Remove and set aside.
Step 3: Add more olive oil, saute sliced garlic till fragrant, add in zucchini and stir fry for 1 minute. Add in cherry tomatoes, stir to combine.
Step 4: Add in shrimps (Step 2), stir fry to combine. Add salt and black pepper to taste. Off the fire and add in the sweet basil leaves, stir to combine well.
Step 5: Serve.

Kris, yes, it’s one pot dish, all cooked in this cash iron pan and my pan was too small for my quantity. 😛
