Yen Can Cook ~ Simple Lamb Pilaf
Pilaf or Pilau is a rice dish of South Asian, Central Asian and Middle Eastern origin. The recipe usually involves cooking the rice soaked in stock or broth, adding meat, spices, and other ingredients such as vegetables. Source
It sounds like a complicated dish and need certain skill to prepare, but….. fret not, mine is a rather simplified version which used less spices and flavoured by oyster sauce and soy sauce, kindly of a Chinese version I would say.(^ω^) I cooked the classic lamb version and used some beautiful lamb shoulder from True Aussie Beef & Lamb for the dish.
Ingredients (Serve: 3 – 4)
2 cups rice, rinsed.
600g-700g lamb shoulder/lamb spare ribs
4 cloves garlic, peeled
1/2 thumb-sized ginger, sliced
1 red onion, sliced
1 carrot, cut think sticks
1.5 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
1 teaspoon cumin powder/ground cumin
3 cups water
Cooking oil
Chopped spring onion for garnishing (optional)

Step 1: Heat oil in a pan, put in lamb to sear until both sides are browned. Remove from pan and set aside.
Step 2: In the same pan, add in ginger and garlic, saute till fragrant. Add in onion and carrot, stir and cook for 2-3 minutes. Add in oyster sauce, soy sauce, sugar, cumin power and water, bring to a boil then off the heat.
Step 3: Put rice in rice cooker, pour in the water (Step 2) then arranged the seared lamb pieces on top.
Step 4: Cook the rice in rice cooker as normal.
Step 5: Sprinkle with chopped spring onion and serve.
