Yen Can Cook ~ Stir Fried Baby Kailan with Salted Fish
A quick and easy, classic Chinese vegetable dish of stir-fried Kailan with salted fish. The pairing of Kailan and salted fish in this Chinese dish is such a perfect match. The addition of salted fish enhances the taste of your a simple vegetable stir fry which can be served on its own with rice or served as side dish with other dishes.
Normally dried salted fish like above is used for this dish but I only have salted fish in jar like the photo below in my pantry, but it worked rather well also.
Ingredients (Serve: 3-4)
1kg Baby Kailan / Kailan
60g salted fish
5 cloves garlic, sliced
2 tablespoons Chinese cooking wine
Salt & sugar to taste
Cooking oil

Step 1: Trim off the end of the Kailan then cut into smaller pieces.
Step 2: Heat up cooking oil in wok and fry salted fish until golden brown. Dish up break the salted fish into small pieces and set aside.
Step 3: In the same wok, saute garlic slices till fragrant, then add in Baby Kailan and stir fry briskly at high heat, until the vegetables just wilted.
Step 4: Add in salted fish, continue stir fry for a few seconds. Drizzle the Chinese cooking wine around the edge of the wok then add salt and sugar to taste.
Step 5: Serve.

This is my dad’s favorite veggie dish but my mum banned salted fish from our kitchen since we were young LOL! Your dish looks very good because the kai lan is beautifully dark green. To me, this baby kailan with salted fish would pair very well with white rice and sweet and sour pork.
PH, why salted fish is banned? Because it is unhealthy?
Anything with salted fish will enhance its taste. These days I use fresh salted fish (not dried ones and not those in brine in a jar). I think there was some news some time ago about not consuming salted fish in brine.
