Yen Can Cook ~ Tomato Beef Soup
This one pot Tomato Beef Soup is so easy to make and it’s packed with delicious flavours. I like the Enoki Mushrooms which can absorb the tart and sweet tomatoes flavours wonderfully. Want a perfect accompaniment to a cosy evening, this recipe will not disappoint!
Ingredients (Serve: 3-4)
3 large tomatoes, diced
300g sliced beef (Shabu Shabu beef)
1 packet Enoki Mushrooms, trim the ends, rinse and separate into smaller sections
5-6pcs fried Fu Zhuk (bean curd sheet) (optional)
1/4 thumb-sized ginger, minced
2 cloves garlic, minced
1 tablespoon soy sauce
2 tablespoons oyster sauce
3 tablespoon ketchup or 2 tablespoon tomato paste
500ml water
A dash of pepper
Sugar to taste
Cooking oil
Chopped spring onion for garnishing (optional)

Step 1: Heat cooking oil in a pot or deep skillet, saute the ginger and garlic till fragrant.
Step 2: Add in diced tomatoes, cook until soften and juice releases.
Step 3: Pour in the water, oyster sauce, light soy sauce and ketchup. Stir to mix and bring to a boil.
Step 4: Add in the beef slices, let it cooks and skim off the scum on the surface, for about 3-4 minutes.
Step 5: Add in the Enoki Mushrooms and bean curd sheets, simmer for another 3 minutes or until the mushrooms are softened.
Step 6: Add in pepper and sugar to taste. Garnish with chopped spring onion and serve.

Ooo…this recipe is a little different than what I usually cook and eat…and would love to try if I can get hold of some beef. Plus I do like the simplicity of a one-pot or one-dish cook like this.
