Yen Can Cook ~ Tuna Bacon Pasta
A quick and simple pasta recipe which is a sure winner with everyone of all ages!
Ingredients (Serve: 3-4)
400g spaghetti
300g tomatoes/cherry tomatoes
2 canned tuna chunk in olive oil/water, discard the liquid
6 rashers bacon, cut into small pieces
1 yellow onion, sliced
5 cloves garlic, minced
2.5 tablespoons ketchup
2.5 teaspoons sugar
2 tablespoons olive oil
1 teaspoon Tabasco (optional)
Salt and black pepper to taste

Step 1: Cook the spaghetti in a large pot of salted boiling water following pack instructions, MINUS 1 minute. Drain and set aside.
Step 2: Blend the tomatoes/cherry tomatoes + sugar in a blender.
Step 3: Heat the olive oil in a pan over a medium-low heat. Add the minced garlic and sliced onion, stir fry until fragrant.
Step 4: Add in bacon and continue to stir fry until the bacon are slightly browned. Pour in the tomato sauce (Step 2) and continue to stir to combine. Add in ketchup and Tabasco.
Step 5: Add in cooked spaghetti (Step 1), toss everything together until the pasta are evenly coated with the sauce.
Step 6: Add in the tuna chunks and toss to mix. Add salt and black pepper to taste.
Step 7: Serve.

Ah, I see you don’t use store-bought jars of tomato-based pasta sauce but use blended fresh tomatoes with tomato ketchup instead. The lazy me rely on bottled tomato sauce/paste! :O
Kris, for this recipe, yes, I made the sauce but usually I use bottled pasta sauce also. But I will put a lot of fresh tomatoes, cook until they release juices then add small amount of bottled pasta sauce.
I have not cooked tuna with pasta as yet and I might try it one of these days.
