Yen Can Cook ~ Winter Melon Clams Soup
This soup combination of winter melon and clams is delightful with hint of sweetness and saltiness while still keeping the dish light and refreshing.
I like to cook this winter melon clams soup as my dinner when I want a light meal. It can be served as an appetizer or a simple soup course together with other dishes during lunch or dinner.
Ingredients (Serve: 3-4)
200g clams (I used frozen clams)
200g winter melon, sliced
1 thumb-sized ginger, julliened
1 tablespoon Chinese cooking wine
1200ml water (included the essence in the frozen clams)
Salt and pepper to taste
Cooking oil
Chopped spring onion for garnishing

Step 1: Heat up some cooking oil in a saucepan and saute the ginger until fragrant.
Step 2: Add in winter melon and water, bring to a boil. Reduce heat and simmer for 10-15 minutes or or until the winter melon slices are soften.
Step 3: Add in clams and Chinese cooking wine, bring it to boil again. Turn off heat. Season with salt and pepper to taste.
Step 4: Sprinkle with chopped spring onion and serve.

Wah, I must make winter melon soup soon….since it only takes 10 – 15 minutes to soften. Not sure if I can recognise a winter melon or know how to cut one….kekeke! 😉 Is winter melon very “leong” by the way?
Kris, I never expect you and PH never see a fresh winter melon! It is in light green colour and looks like watermelon (round shape) without the curly stripes. One whole winter melon might too much for small family but fret not, you can always search for those cut/thickly sliced one.
The cooking time is depends on the thickness of your winter melon, I cut them quite thin this round, so the cooking time was shorter too.
This must be the fresh winter melon. I only know the sugared winter melon that they sell in packets to make tong sui. Fresh winter melon look like how eh? I must google and find out LOL!

LOLOL!! I wanna laugh so hard that 2 expert ladies here had never seen or unsure of Winter Melon. Thanks to my mummy who sent me to wet markets with a basket alone when I was in primary school to buy vegetables and fishes. I love to drink winter melon soups and eat clams separately. This combo is a good idea for sure.
