Yen Can Cook ~ Butter Cookies
Although I’m not really looking forward to Chinese New Year this year, but I still made an effort to bake this easy butter cookies which is in my to-do list for some time. The reason why I dragged so long because I always forgot to get the piping bag but you know what, the set that I got don’t have the nozzle that I need for this butter cookies. So please pardon the irregular shapes of my cookies as the nozzle I used was a tad too small/difficult to form a pretty cookie shape. T_T
But fret not, the shape doesn’t affect the flavour and texture of the cookies nonetheless. They are buttery, light and literally melt in your mouth. Most important is, they are so easy to make, with just 3 ingredients! So let’s do it!
Ingredients (60± cookies)
250g unsalted butter, room temperature
60g powdered sugar
250g multi-purpose flour

Step 1: In a large bowl beat the butter with mixer until creamy. Add the powdered sugar and continue mixing until the mixture becomes white and creamy.
Step 2: Add the flour and use a spatula to incorporate the flour into the butter mixture until completely combined.
Step 3: Preheat oven to 180ºC. Line a baking tray with parchment paper/silicone baking mat.
Step 4: Transfer the batter into piping bag fitted with 1M or 1F nozzle. Pipe to form cookies on the prepared baking tray. (Step 3)
Step 5: Bake for 12-15 minutes, until slightly golden.
Step 6: Allow cool on cooling rack before storing in airtight container.

Yeah though the shape is difficult to maintain I believe the taste is still scrumptious. 😀

I have planned to make cookies this CNY for the first time after a long hiatus since my student days. I will give them to closest relatives and hope they will not get tummy aches. LOLOL

I suck at piping stuff, so your piping is better than mine anytime. The recipe is so simple, only three ingredients. I like! I should start baking cookies too. Somehow not motivated.

I see you’ve started to make cookies in preparation for CNY. I’ve also stocked up on more snacks this year compared to previous years in anticipation that we’ll be stuck at home. Do what….eat saja-lah! 😀 P/S: Hmmm, interesting choice to present your cookies in a dim sum basket! 😉
Kris, actually I only made these batch of CNY cookies and I have tonnes of snacks, cookies and treats which are from online purchases, friends and family that enough for me to eat till Chor 15. LOL
