Yen Can Cook ~ Winter Melon & Corn Soup
Winter melon is one of my favourite ingredients to use either for a quick soup dish on weeknights or as simple lunch to be cooked in my office (with my humble mini rice cooker).
Winter melon is often praised as a weight-loss tool, plausibly because it is high in fiber and relatively low in calories. Due to this benefit (low in calories), you can eat as much as you want but this vegetable can really make you feel full, don’t play play, LOL
Ingredients (Serve: 3-4)
300g – 400g winter melon, diced
100g corn kernels
1 thumb-sized ginger, sliced
1200ml water
Salt and pepper to taste
Cooking oil
Chopped spring onion for garnishing
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Heat up some cooking oil in a saucepan and saute the ginger until fragrant.
Step 2: Add in winter melon stir fry for 1 minute. Add in water and bring to a boil. Reduce heat and simmer for 10-15 minutes or or until the winter melon are soften.
Step 3: Add in corn kernels, bring it to boil again. Turn off heat. Season with salt and pepper to taste.
Step 4: Sprinkle with chopped spring onion and serve.

Yes, I’ve seen you post quite a few winter melon soup recipes before, so I tried the other day but my winter melon turned out slightly bitter. I wonder why? I presume it was the winter melon I got. Have you had any bitter ones before?
