Yen Can Cook: Corn Cheesy Croquette
A croquette is a small breadcrumbed fried food which usually shaped into a cylinder, disk, or oval shape containing mashed potatoes and/or ground meat. Sometimes it comes with a filling such as sautéed onions, mushrooms, or boiled eggs (Scotch eggs) and usually being deep fried but I’m going to prepare it with a healthier way of baking it.
Ingredients
2 potatoes
2 cups cornflakes
1 tablespoon butter
Mozzarella cheese, cut into cubes
1/2 cup corn kernels
1 egg
salt and pepper
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Prepare mashed potato (refer HERE) and add in corn kernels.
Step 2: Scoop up mashed potato and place 1 cheese cube in the centre then mould mixture around cheese to enclose.
Step 3: Shape into oval and put into fridge for 10 minutes to set the shape.
Step 4: Put cornflakes into ziplock bag then crush with rolling pin or anything available such as glass bottles and etc.
Step 5: Beat the egg, dip the croquette in egg mixture then coat with crushed cornflakes.
Step 6: Pre-heat oven, arrange croquette on lined tray and bake with 200°C for 15 minutes or until golden brown.

Baked croquettes…healthy and nice…but I’d leave out the cheese (since I’m not into cheese)! ;D
