Yen Can Cook: Chicken Mushroom One Pot Rice
When the lazy bug bites and don’t feel like want to eat out, this quickie one pot rice will appear on my dining table. Just dig out any ingredients in your fridge and dinner doesn’t get much easier than this one-pot meals.
Ingredients (Serve: 3-4)
2 cups rice (rinse and put in rice cooker)
2.5 cups water (but a bit lesser because mushroom will release water)
500g boneless chicken, cubed
6 Shiitake Mushrooms, quartered
½ onion, sliced
1/4 pumpkin, cubed
1/2 thumb-sized ginger, julienned
1 tablespoon vegetable oil
1 tablespoon soy sauce
1 tablespoon oyster sauce
1/2 teaspoon dark soy sauce

Step 1: Heat oil in a wok, add ginger and onions fry till fragrant
Step 2: Add in the chicken cubes, mushroom and pumpkin, fry for two minutes.
Step 3: Add in water and let simmer for two minutes.
Step 4: Transfer to rice cooker with rinsed rice. Cook rice as usual.
Mine was a bit watery due too I add water like usual rice cooking and the pumpkin and chicken tend to release more juices when the cooking process.

When I saw your post title, I thought you’d be cooking something like claypot rice….this one looks like risotto with lots of ingredients (yum yum)….hehe…even classier! 😀
Risotto? Haha, very far from that level lah, dare not to challenge for the moment 😛
